Brut Rose’s personality lies in our parcel ‘le clos’ situated in the village of Chamery, next to our cellar.
Both Pinot noir and Pinot Meunier grow here on a compact thanetien sand soil, giving small yield, but healthy and well concentrated grapes. About 10% are vinifi ed as red wine. A quarter of Chardonnay from Vrigny’s top hill comes to balance the blend with a touch of minerality and citrusy character.
The pinot noir and pinot meunier base wine are vinifi ed in inox tank and stay on lees for 7 month. 20% of the volume is conserve one more year to constitute the reserve wine part of the blend.
The red wine is made only by pumping over on partially destem grapes. After the fermentation by natural yeast, it stays in 400L oak barrels for 7 month.
The Chardonnay is vinifi ed in old 228L oak casks and stays 7 month on lees after the natural yeast fermentation.
The Blending happens one month before the bottling, usually done during the month of May.
After 3 years of aging in the cellars, the bottles are disgorged and receive a slight dosage.
