One of mine: a garlic cheddar sold at our local farmer's market by Spring Hill that is, in the words of my teen, "the bomb" when melted. It makes an outrageously good grilled cheese sandwich, best paired with a rich Syrah. Another favorite cheese is the Humboldt Fog--a melt-in-your-mouth goat cheese with a ribbon of edible ash, a chewy crust and a sublime gooey layer between crust and interior. Pair this with Pinot for happiness.

By the way, the quote above was from Mary Frances Kennedy Fisher. She was an American food writer who was born in 1908 and died in 1992. She was a founder of the Napa Valley Wine Library, wrote 27 books on food, wine and travel and was as influential as Julia Child, though not as famous.
